The Perfect Orange Pine Punch Cocktail for Carnival

A quick & zingy Carnival cocktail.

This simple zingy punch is perfect for house limes, and easy enough to batch out for cooler fetes.
The Orange-Pine Punch is proven to cool your down in the Carnival Heat. This recipe creates one serving.

  • 40ml simple syrup
  • 25ml orange juice (fresh or boxed)
  • 25ml pineapple juice (fresh or boxed)
  • 50ml Angostura 5 Year Rum
  • (2) dashes of Angostura Bitters

First you’ll need simple syrup.

Don’t be intimidated. Simple Syrup is very easy to make. Simple Syrup is made by measuring out a 1:1 ratio of water to sugar and mixing together until dissolved (i.e/ 100ml of water with 100ml of sugar).

It’s a good idea to make batches of simple syrup, we recommend 200ml water with 200ml sugar. The Simple Syrup should be a thick clear mixture if using white sugar, or a golden brown if using demerara sugar. Then store in fridge until needed.

1. Measure and pour everything into cocktail shaker.

In no particular order, measure out and pour the following into a cocktail shaker:

  • 40ml simple syrup
  • 25ml orange juice
  • 25ml pineapple juice
  • 50ml pineapple juice
  • 50ml Angostura 5 Year Rum
  • 2 dashes of Angostura Bitters

We’d highly recommend using a cocktail shaker, in the absence of such, you could put all the ingredients into a container and shake it up. We also recommend using a jigger; the small hourglass looking measuring cup. Most commonly seen as having a small side of 30ml and a long side of 60ml.

2. Add ice and shake. 

With everything added to the base of the shaker, add about 4-5 pieces of ice. Ensure shaker is covered properly, place hands firmly at the top and bottom of the shaker. Shake for about 40-45 seconds in a quick back and forth motion. Tip: Listen for the sound of the ice hitting the sides of the shaker. You’ll know all the ice is gone when you only hear the sound of liquid.

3. Strain and serve.

For those using the two piece Boston shaker, fit the strainer on top the shaker, and then pour. Why are we straining? We’re straining to separate the ice. But if you shook well enough, there shouldn’t be any.

Remember, you can always sweeten your Orange-Pine Punch with a few ml more of simple syrup, if you think it’s too bitter. Enjoy!
